Local customs and traditions are part of the cultural traits that build our values and which are transmitted from generation to generation. This is no less true with gastronomy and at the Regulating Council of the Certificate of Origin of Chufa of Valencia, we are fully aware of this fact.

For this reason, the regional Government of Valencia, through its Council of Agriculture and Environment, decided to regulate the production of chufa (also known in English as tigernut) and its derived drink, known as horchata, through the law of 25 September 1995 pertaining to the Certificate of Origin of Chufa of Valencia that led to the creation of the Regulating Council, the official body that oversees its quality and proof of origin.

One of the priorities of the Regulating Council is to ensure the quality of our prime material, the chufa, throughout all of its production phases: harvesting, cleaning, drying and selection. Equally, displaying our label of quality in both the final product and the premises that cater it is a guarantee to the final customer that they consume only the best after having passed the stringiest quality controls.

To summarise, the Certificate of Origin is a guarantee attesting to the quality of the chufa and the Regulating Council of the Certificate of Origin Chufa of Valencia is the body that supervises the Certificate.
