TIGER NUT MILK OF VALENCIA

TYPES OF TIGER NUT MILK / Tiger nut milk natural of Valencia

It will be prepared with the adequate proportion of tiger nut, water and sugar because the product have a minimum of 12% of soluble solids expressed as ºBrix at 20ºC. Its minimum starch contents will be 1´9% and the greases one will be 2%. It will have a minimum pH of 6'3. Total sugars, expressed in sacarose, will exceed 10%. Both starch and grease will come exclusively from the tubers used in the tiger nut milk preparation.
Optionally, tiger nut milk could be prepared simply with tiger nuts and water. In this case, it must have a minimum of 4'5% of soluble solids expressed as ºBrix at 20ºC. Analogously, its starch contents will be a minimum 1'9% and the greases contents 2% and either the soluble solids and the starch and grease will come exclusively from the tubers used in the tiger nut milk preparation. Natural tiger nut milk can be presented as liquid, hailstorm or congealed.
